Lambics- style of Belgian Sour Ale
Lambics are probably the most accessible sour beer. You’ve probably had a fruit lambic, like a Framboise. There is a lot more to Lambics than just raspberry beer. Lambics are interesting because sour yeast isn’t used to brew them. Instead, they are the product of spontaneous fermentation. Rather than being aged in a barrel or cask, they are openly aged and fermented. It’s basically an indoor swimming pool full of beer and all the yeast and bacteria from the air ferments the beer. The fruit is sometimes added during second fermentation, in the bottle. It sounds a little weird, but we promise its delicious. Unfiltered Lambics are harder to find, the fruit lambics being more abundant. Serve all lambics in a stemmed glass with a bulbous top- like a tulip, snifter, or a wine glass will work in a pinch.
